This book is great if your after a science based understanding of meat and it's composition. Good core text book for anybody studing Food and wishes to have a bible for meat. However for those looking for a great insight into husband and usage of the carcuss I would suggest River Cottage Meat Book by Hugh Fearnley-whittingstall. As a combination there is much else you need to know about meat unless your aspirations are of being a specialist, even then this is a great start point.
